REALITY
In order to be 100% certain that a product comes from Sparta or Laconia (the Prefecture where Sparta is located.), a PDO or PGI License is required. (PDO: Protected Designation of Origin - PGI: Protected Geographical Indication). This License is given by the Greek State.
It is a relatively easy process to obtain a PDO - PGI License if an estate AND the production unit is trully in Sparta / Laconia / Taygetos (Mountain of Sparta), while Bottling also has to take place in the same area (by PDO - PGI Law). Lack of a PDO - PGI License, means that relevant paperwork / proof / evidence is missing => most probably it is not from Sparta / Laconia / Taygetos, so it is just an appropriation

WILD OLIVE OIL
REALITY
In order to produce Wild Olive Oil, Wild Olive Trees are required. The confirmation of Wild Olive Trees comes from relevant State / Country authorities. In particular in Sparta - Laconia come from the Forest Authorities of Sparta - Laconia.
Wild Olive Trees are rare and "difficult" to handle. The producers usually "vaccinate" them (turn them to other varieties e.g. koroneiki), because the Natural Wild Olive Tree is very hard to harvest. In addition to that, around 20kg (or more) of Wild Olives are required so as to produce 1kg of Wild Olive Oil (1/20 yield = 5%). The other "vaccinated" olive varieties have much higher yields, for instance 1kg of olive oil can be obtained from 5kg of koroneiki olives (1/5 yield = 20%).
Factors such as the above render the real Wild Olive Trees very hard to manage, both financially and practically.

HIGH POLYPHENOLIC OLIVE OIL
REALITY
The term "high polyphenolic" is somewhat flexible. Some consider a "high polyphenolic olive oil" any olive oil that contains above 250mg/kg of polyphenols (according to EU Reg 432/2012). Others call "high polyphenolic" any olive oil that contains more than 1000mg/kg of polyphenols. Some Universities call "high polyphenolic olive oil" any olive oil that contains above 1500mg/kg. Some Distributors call a "high polyphenolic olive oil" any olive oil containing above 3000mg/kg of polyphenols (extremely rare to produce). In any case, AN ANALYSIS WITH NUMERICAL DATA from an accredited organisation (Universities, Certified Laboratories etc) is required to support the claim and compare numerical results.

Labels are obligatory for each container separately. By Law, every container individually must contain information, no matter how small or big it is. Labels are "Intelectual Property". "Literary Property" and there are Laws in every Country / State preventing copying / reproducing etc. Labeling of olive oil products is a complex and challenging issue and requires several elements to be written, depending on the Country / State of Origin and the Country / State of Export. Several data have to be presented such as Registered Brands, Nutrition Facts, Company Communication Data (Addresses, Telephone etc), Harvest / Bottling Date, Best Before Date, Barcode (SKU, UPC, EAN), Licenses etc.

NMR vs LCMS vs HPLC (POLYPHENOLS MEASUREMENT METHODS)
REALITY
Universities and Certified Organisations / Laboratories research and discuss over methods concerning which is the best method to identify olive oil polyphenols.

We conduct Analyses in accredited Universities (Univ. of Athens - Univ. of Crete - Univ. of Nicosia - Univ. of Cordoba - Chem Solutions etc) with several methods (NMR, LCMS, HPLC etc) to check first hand any differences in the numerical data.
To see for ourselves any differences between NMR, LCMS and HPLC, we put all of them to the test: We sent a sample from our exact same bottle from olive oil lot Δ25 (produced on 25th of September 2025), to be analyzed independently to:
- Faculty of Pharmacy in University of Athens (measuring with NMR 2924mg/kg total polyphenols)
- Department of Analytical Chemistry in University of Cordoba (measuring with LCMS 3107mg/kg total polyphenols)
- Chem Solutions, Certified EU Lab (measuring with HPLC 4412mg/kg total polyphenols)
For convenience, the comparison of the above results are presented side-by-side as:
CONCLUSION
- Comparing the above analyses in "absolute numbers" (NMR: 2924mg/kg of total polyphenols - LCMS: 3107mg/kg of total polyphenols - HPLC: 4412mg/kg of total polyphenols), even though each chemical compound may differ slightly, total polyphenols with NMR & LCMS methods are very similar (6% higher in LCMS). HPLC demonstrated a significant higher total polyphenols than the other two methods (around 50% more), while in the HPLC the Oleocanthal & Oleacein were mostly identified as DDLA (Dialdehydic Ligstroside Aglycon) & DDOA (Dialdehydic Oleuropein Aglycon)
- IT HAS ALSO TO BE TAKEN INTO ACCOUNT THAT THE DISTANCE FROM OUR ESTATE TO UNIVERSITY OF ATHENS IS 270km (4 HOURS DRIVE), THE DISTANCE FROM OUR ESTATE TO UNIVERSITY OF CORDOBA IS +4000km (5 DAYS EXPRESS SHIPPING) & THE DISTANCE FROM OUR ESTATE TO CHEM SOLUTIONS IS 270km (4 HOURS DRIVE).
- THE MEASUREMENT WITH NMR (ATHENS) TOOK PLACE 1 DAY AFTER THE PRODUCTION OF THE OLIVE OIL, THE MEASUREMENT WITH LCMS (CORDOBA) TOOK PLACE 48 DAYS AFTER THE PRODUCTION OF THE OLIVE OIL & THE MEASUREMENT WITH HPLC (ATHENS) TOOK PLACE 97 DAYS AFTER THE PRODUCTION OF THE OLIVE OIL
=> LCMS & NMR ARE VERY SIMILAR IN RESULTS, LCMS SHOWS A LITTLE MORE TOTAL OLIVE OIL POLYPHENOLS (+6%) THAN THE NMR
=> HPLC BY FAR EXCEEDS LCMS & NMR IN RESULTS, SHOWING +50% HIGHER TOTAL POLYPHENOLS THAN LCMS OR NMR

IMPORTANT NOTICE: Allegations such as:
- "only HPLC shows the real polyphenols since it is recognised by the International Olive Oil Council"
- "LCMS shows the real polyphenols"
- "NMR inflates polyphenols by 66% compared to LCMS and 70% compared to HPLC"
- "to convert the NMR to LCMS, multiply the NMR number by 0.6 to find the LCMS number"
- "to convert the NMR to HPLC, multiply the NMR number by 0.66 to find the HPLC number"
THAT WOULD ALSO MEAN BY "COUNTER REVERSING" THAT:
- OUR ABOVE LCMS ANALYSIS 3107mg/kg WOULD THEORETICALLY CORRESPOND TO 3107 x 1.66 = 5176mg/kg "NMR CONVERTED".
- OUR ABOVE HPLC ANALYSIS 4412mg/kg WOULD THEORETICALLY CORRESPOND TO 4412 x 1.50 = 6618mg/kg "NMR CONVERTED".
IN REALITY THE ABOVE EXPERIMENT (ANALYZE FROM THE SAME BOTTLE WITH NMR & LCMS & HPLC) DEMONSTRATED THAT ALL THREE METHODS AND RESULTS ARE VALID.
POLYPHENOLS MEASUREMENT METHODS ARE NOT "CONVERTABLE". NMR & LCMS & HPLC ARE SCIENTIFICALLY RECOGNISED WITHIN THE SCIENTIFIC COMMUNITY AND EACH HAS ITS OWN PROVEN BACKGROUND.

ZERO / NEGATIVE CARBON STATUS

Our entire Estate / Buildings / Production Unit / Office / Storage are our own private property while our Carbon Status is Negative (Net Benefit 431 tCO₂/yr or Net Benefit 215.5kg CO₂/lt of Medicinal Wild Olive Oil produced). REALITY
Confirmation from a Certified Organisation is required. This is a very complex matter, a cumbersome process and requires at least a 2 years period where the independent Organisation will access daily all the assets / processes etc and measure, calculate and verify all relevant data of the company in order to validate.
Generally olives groves (alone) present zero to negative carbon status (they consist of olive trees), though processes such as fertilizing / pesticiding, pruning, cutting plants / herbs / weeds increase the carbon status.
Then the olive oil production processes (especially when not renewable energy sources are used), pressing / bottling / storing / offices etc, including trasnportation (intracompany and extracompany to distributors / customers / consumers etc) also increase it.
Energy comsumed, energy sources (when the energy doesnt come from renewable energy sources), water consumption / usage (when it comes from the grid and not from natural fountains) also increase it.
Even the auxiliary materials play their part.
So, all the assets, processes etc have to be accordingly measured and converted and summed, for at least 2 years, from a dedicated independent team of experts who will conduct exclusively the carbon status project.
It has also to be taken into account that most producers lack integration: someone's olive grove, another harvests, a 3rd party presses, a 4th party standardizes, a 5th party storages, a 6th party distributes, a 7th party delivers to consumers etc rendering impossible any real carbon status measurement, not to mention a "whatever" final product.

Such statements as "best" need definition, in relevant "to what", especially with numerical data / measurements / analyses from accredited organisations.
Keep in mind that real customers prefer privacy and dont act as "theatricality dummies". Beware of paid advertisements trying to pass as "testimonials", or advertising promotion in social media.
Dont forget that there is also the GDPR (General Data Protection Regulation) which protects data privacy for individuals.
Another "red flag" is if a company / producer offers only a couple olive oil products => usually they dont own neither olive groves or press or bottling / standardization unit => they just buy "bulk" and label it somewhere as whatever they want, without license and they target on sales, not quality.
Remember that Standardization / Bottling and Labeling, by law, is obligatory in every country and has to be applied in every single container, demonstrating information. Beware of products that are not labeled individually on the olive oil container (besides the transport carton), "bags" containing small portions of olive oil in "innovative" containers, "seaweed", "pods", "compostable" (they are reactive to olive oil and pass to the olive oil harmful elements).
The Organic Certificate also is obligatory and states information about the production unit, own estate etc
